High Cut is an elegant Brett Beer crafted from a blend of three- and four-year-old barrels, achieving a sophisticated balance of aged complexity and vibrant freshness. The sensory profile is defined by a bright citrus acidity and a profound, well-integrated funk. Dry-hopping with whole-leaf Saaz provides a delicate noble spice and herbal undertone, while US Citra amplifies the zesty lemon and grapefruit notes derived from the wild fermentation. This summery beer presents a light, crisp character with a bone-dry finish, showcasing the interplay between mature wood-aged depth and the aromatic vitality of fresh hops.

Appearance. Pours a pale straw to light gold (4–6 SRM). Displays slight haze with a fine, persistent white head that leaves delicate lacing.

Aroma. High intensity aromatics featuring a sophisticated blend of rustic funk—wet hay and barnyard—and bright citrus. The Citra provides distinct lemon zest and grapefruit peel, while the Saaz contributes spicy, herbal, and floral noble notes. Esters of stone fruit and tropical pineapple meld with a subtle oak-derived vanilla.

Taste. Initial impression of bright, clean citrus and moderate acidity. Flavors of grapefruit and lemon curd transition into a spicy, peppery middle. The Brettanomyces character provides a savory, earthy funk that adds layers without being overbearing. Extremely dry finish with very low malt presence and a clean, lingering citrus pith bitterness.

Mouthfeel. Medium-light body with high, effervescent carbonation that provides a prickly, refreshing texture. Very low astringency and a subtle, well-integrated alcohol warmth. Highly attenuated and crisp.

It was made from a blend of pale beers, consisting of 2 barrels of 4 year old beer, and 2 barrels of 3 year old beer. The barrels making up the blend were selected for their combination of bright citrus acidity and balancing deep funk, to produce a complex yet elegant summery beer. The finished blend was dry-hopped with fresh whole-leaf Czech Saaz hops, for their wonderful noble aromatics, along with a touch of US Citra to highten the lemon/grapefruit notes of the fermentation. Bottled straight from the dry-hop tank to capture as much of the hop as possible, the finished beer then conditioned in bottle for 5 months."

Het is gemaakt van een mix van bleke bieren, bestaande uit 2 vaten bier van 4 jaar oud en 2 vaten bier van 3 jaar oud. De vaten waaruit de blend bestaat, zijn geselecteerd vanwege hun combinatie van heldere citruszuren en evenwichtige diepe funk, om een complex maar toch elegant zomers bier te produceren. De uiteindelijke blend werd drooggehopt met verse Tsjechische Saaz-hop met hele bladeren, vanwege hun prachtige nobele aroma's, samen met een vleugje Amerikaanse Citra om de citroen-grapefruittonen van de fermentatie te versterken. Het bier wordt rechtstreeks uit de drooghoptank gebotteld om zoveel mogelijk hop op te vangen. Het afgewerkte bier wordt vervolgens gedurende 5 maanden op fles geconditioneerd.

MILLS BREWING High Cut ist ein Wild Ale. Dies ist eine neue Mischung, die geschaffen wurde, um den bemerkenswert leichten und frischen Zitruston einzufangen, den wir in einigen unserer älteren Fässer finden. Sie wurde aus einer Mischung von hellen Bieren hergestellt, die aus 2 Fässern mit 4 Jahre altem Bier und 2 Fässern mit 3 Jahre altem Bier besteht. Die Fässer, aus denen sich die Mischung zusammensetzt, wurden aufgrund ihrer Kombination aus heller Zitrussäure und ausgleichendem, tiefem Funk ausgewählt, um ein komplexes, aber elegantes Sommerbier zu erzeugen. Die fertige Mischung wurde mit frischem tschechischem Saazer Vollblatthopfen trockengehopft, der für seine wundervollen edlen Aromen bekannt ist, sowie mit einem Hauch von US-amerikanischem Citra, um die Zitronen-/Grapefruitnoten der Gärung zu verstärken. Das fertige Bier wurde direkt aus dem Dry-Hop-Tank abgefüllt, um so viel Hopfen wie möglich aufzunehmen, und reifte dann 5 Monate lang in der Flasche.“
