This complex Saison offers a rustic sensory journey, blending traditional farmhouse character with innovative fruit integration. A foundation of barley and oats provides a soft, grainy texture that supports an expressive hop profile. High-intensity aromatics of Sorachi Ace introduce lemon and herbal nuances, while Amarillo contributes bright citrus and floral notes. The primary fermentation with Gin perry pears and secondary priming with Conference pear juice creates layers of fresh pome fruit and delicate orchard sweetness. Matured in an ex-Scotch barrel, the profile gains sophisticated whispers of oak and spirit, finishing bone-dry and effervescent with a lingering, sophisticated fruit complexity.
Appearance. Pale straw to light gold (3-4 SRM). Highly turbid to opaque due to the turbid mash and heavy use of oats. Pours with a dense, rocky white head that shows exceptional retention and thick Belgian lacing.
Aroma. High intensity aromatics. Fresh pear is the dominant feature, offering both floral and ripe pome fruit notes. Sorachi Ace adds a distinct lemon zest and herbal character, while Amarillo provides orange marmalade and floral hints. Low but noticeable notes of toasted oak and a faint peaty Scotch whisky character from the barrel. Esters are moderate, manifesting as spicy black pepper.
Taste. The initial impression is remarkably dry and crisp. Intense flavors of fresh pear and tart apple are balanced by a rustic, grainy malt character from the oats and barley. Hop flavors of lemon, herbal tea, and grapefruit pith are present. Bitterness is moderate but accentuated by the high attenuation. The finish is clean, bone-dry, and lingering with a subtle oak tannin and fruit-skin tartness.
Mouthfeel. Light-bodied but with a soft, creamy silkiness provided by the oats. Carbonation is very high and effervescent, creating a lively prickle on the palate. Alcohol warmth is negligible, and there is a very low, pleasant oak astringency in the finish.

The resulting very pale wort was hopped with fresh whole-leaf Sorachi Ace in the boil, before the cooled wort was dry hopped with Amarillo in the coolship. Fermentation then took place in a single ex-Scotch barrel with juice from Gloucestershire grown Gin perry pears we picked from a local orchard. The finished beer was primed with Herefordshire grown Conference pear juice. Matured in bottle for 9 months before release." Botlted in December 2020.
