Mills Brewing Glass - Blend Four presents an ethereal and highly sessionable expression of a Brett Beer. Brewed with an extra pale wort and fresh East Kent Goldings, it offers a delicate balance of earthy hop notes and a clean, minerally backbone. The addition of sea salt heightens the beer’s crispness, accentuating a lean, bone-dry profile derived from extended maturation in a single barrel. Subtle yeast activity introduces nuanced tropical fruit and light orchard esters rather than heavy funk. This blend is defined by its transparency of ingredients, where the herbal quality of the hops meets a refreshing, saline-inflected finish.
Appearance.SRM 2-3. Pale straw to extra pale gold. Brilliant clarity with a thin, bright white head and moderate lacing.
Aroma.Moderate intensity featuring fresh hay, dried herbs, and floral earthiness from East Kent Goldings. Low stone fruit and citrus esters are present, accompanied by a very light, rustic, earthy funk and a clean mineral note.
Taste.Initial impression is bone dry and crisp. Very low cracker-like malt flavors yield to earthy, floral, and slightly spicy hop character. Fermentation provides underripe peach and lemon zest notes with a faint leather edge. Bitterness is low but sharpened by sea salt and high attenuation. Finish is exceptionally clean, short, and refreshing with a lingering saline snap.
Mouthfeel.Light body with a lean, crisp texture. Moderate-high carbonation provides a lively prickle. No alcohol warmth. Includes a slight mineral-driven dryness but no astringency.
