This Brett Beer presents a delicate, summery profile born from a night in a coolship and extended aging in an ancient oak puncheon previously used for West Country cider and Caribbean rum. The aroma is a complex tapestry of fresh kettle-hops, stone fruit, and a refined, earthy funk reminiscent of wet hay. On the palate, it exhibits a lean, bone-dry structure where restrained acidity meets a distinctive mineral character. A subtle addition of Cornish sea salt sharpens the finish, enhancing the beer's crispness while amplifying the subtle oak and orchard fruit nuances derived from the barrel.
Appearance. Very pale straw to light gold (2–4 SRM). Pours with a moderate white head that dissipates to a thin collar, leaving minimal lacing. Appearance is generally clear with a faint, luminous haze from bottle conditioning.
Aroma. High intensity with a bright, fresh hop character intermingling with complex fermentation notes. Expect aromas of lemon zest and white peach alongside a refined barnyard funk, aged hay, and a faint mineral tang. Very subtle traces of apple skin and a ghost of spiced rum emerge from the oak puncheon.
Taste. The initial impression is exceptionally dry and crisp. Delicate malt flavors of crackery grain are quickly overtaken by a gentle lactic-like tang and earthy fermentation character. Flavors of green apple, citrus peel, and a distinct flinty minerality lead to a clean finish. The Cornish sea salt provides a savory edge that cuts through any residual sweetness, leaving a lingering, refreshing salinity. Bitterness is low.
Mouthfeel. Light-bodied and highly attenuated. Carbonation is moderate to high, providing a prickly, effervescent sensation on the tongue. No alcohol warmth is present. The addition of salt adds a slight perceived roundness despite the dryness, without any astringency.
