Foxbic Four presents a masterful fusion of traditional Lambic-style brewing and artisanal cider-making. Spontaneously fermented with Foxwhelp apple juice in old oak barrels, it offers a complex profile where wild yeast funk meets vibrant fruit. The use of the turbid mash method provides a soft, structural base for the sharp, crisp acidity of the bitter-sharp apples. Dry-hopping with whole-cone Amarillo introduces specific aromatics of bright orange and stone-fruit peach, which intertwine with the cider lees and woody depth. This hybrid drink finishes exceptionally dry, balancing its rustic complexity with a refreshing, fruit-forward elegance and a soft, approachable texture.

Appearance. Ranges from pale gold to light amber (6-9 SRM) with a persistent but thin white head that may fade quickly due to acidity. Shows a characteristic haze or cloudiness from the turbid mash and spontaneous fermentation.

Aroma. High intensity aromatics of sharp, tannic Foxwhelp apples and barnyard funk including hay and horse blanket. The Amarillo hops contribute distinct notes of zestful orange and ripe peach, layered over old oak vanillins and a subtle earthy, cider-like lees character.

Taste. Begins with a bracing, crisp acidity followed by a soft, wheaty malt backbone. Flavors of tart green apple and citrus peel from the Amarillo hops dominate, balanced by a light tannic structure from the fruit skins and oak. Low hop bitterness allows the lactic and malic tartness to shine. Finishes bone-dry with lingering notes of peach and wild yeast.

Mouthfeel. Medium-light body with a soft, pillowy texture on the palate. Carbonation is moderate to high, providing a prickly, refreshing sensation. Very low alcohol warmth is well-integrated, with a faint, pleasant astringency from the cider fruit and wood.

Foxbic IV is a spontaneously fermented blend of turbid wort and juice from the inimitable Foxwhelp bitter-sharp apple. This iteration was made using the turbid mash method in the style of traditional Lambic producers. The wort was fermented with Foxwhelp juice and cider lees in old oak barrels for 10 months.
The resulting blend was dry-hopped with whole-cone Amarillo before conditioning in bottle for six months. The finished drink is fairly soft on the palate, with crisp acidity and aromatics reminiscent of orange and peach.

As always, Foxbic is a true union of traditional cider making & beer brewing techniques. Bottled in 2021 & finished in the bottle. The resulting blend was dry – hopped with whole cone Amarillo. Made using the turbid mash method in the style of traditional Lambic producers. 750ml. 7%.
