Mills Brewing Clomp reimagines the Flanders Red Ale through an 18-month maturation in white and red Bordeaux barrels, yielding a complex, vinous structure. The strong red malt base provides a toasty foundation for high-intensity fruit notes of black cherry and plum. Uniquely, a bold dry-hopping of Amarillo, Mosaic, and Ekuanot introduces a vibrant layer of tropical citrus and stone fruit that dances alongside the sharp, prickly acidity. The result is a sophisticated interplay between old-world barrel funk and modern hop aromatics, finishing with a dry, tannic grip reminiscent of a high-acid French Burgundy.
Appearance. Deep burgundy to reddish-brown in color (SRM 15–18). Displays good clarity from long maturation, topped with a thin, pale tan head with average retention.
Aroma. High intensity, offering a complex fruity-sour profile of black cherries, red currants, and plums. The unusual dry-hopping of Amarillo, Mosaic, and Ekuanot adds distinct layers of orange zest, blueberry, and tropical mango. Moderate acidity is present without being overly vinegary, supported by subtle vanilla and toasted oak from Bordeaux barrels.
Taste. Initial impression is sharply tart and fruity. A toasty-rich malt backbone carries flavors of dried fruit leather and cherries. The Amarillo and Mosaic hops contribute non-traditional citrus and melon flavors that meld with the acidic bite. Bitterness is restrained, balanced by the acidity rather than hop bitterness. The finish is very dry and lingering with a notable tannic structure.
Mouthfeel. Medium body with a prickly, acidic mouth-feel. Carbonation is medium-low. There is a noticeable alcohol warmth consistent with the higher ABV, and a moderate astringency from the 18 months of oak aging.

"The second edition of our dry-hopped red beer, Clomp. This blend was made from two brews produced in May 2019 and June 2020. Fermentation took place in red Bordeaux barrels for three and two years respectively. The rich red beer benefitted from a fairly long time in barrel to build the acidity and tannin required to balance the sweetness of the malts. To enhance the bright fruit aromatics present in the base beer, the finished blend was dry-hopped with whole-leaf US grown Chinook, from the latest harvest. The finished beer conditioned in bottle for a (relatively) brief four months before release, to allow enjoyment of the fresh the hop aromatics. As with all our dry-hopped beers, these aromatics will evolve quite dramatically over time."
