This sophisticated Brett Beer showcases the intricate complexity of Mills Brewing’s spontaneous blending. Built from a turbid wort featuring rye malt and aged hops, the base was aged in French oak red Bordeaux barriques before a secondary refermentation with local chuckleberries. The result is an evocative sensory experience where intense, tart berry notes meet the rustic, earthy funk of the house cultures. Aromas of red currants and vinous oak lead into a palate defined by the berries’ bright acidity and soft tannins. The rye malt provides a subtle spicy backbone, while the extended bottle conditioning ensures a crisp, bone-dry finish.
Appearance. Deep reddish-pink with a slight violet hue; hazy with a moderate, fine-beaded pinkish-white head that shows fair retention and light lacing.
Aroma. High intensity; prominent tart red berry and gooseberry notes layered over earthy Brett funk, wet hay, and leathery notes. Vinous red wine esters and a touch of spicy French oak vanilla are present.
Taste. Initial sharp berry tartness transitions into a rustic, spicy rye character. Low hop bitterness from the aged hops allows the bright acidity and fruit tannins to provide structure. The finish is very dry and lingering with notes of dark fruit skins and barnyard funk.

Chuckleberry is a blend of two brews produced in June and September 2019. Made from a turbid wort, using rye malt and aged hops, they started life as potential blending options for our ‘house’ beer, Running Beer. Fermentation and maturation took place in barriques which formerly housed red Bordeaux. We chose three barrels to make a blend that would best fit the fruit: relatively soft and full on the palate to accommodate the fruit’s acidity and tannin, complementary aromatics from the red Bordeaux and French oak, and a balancing funk to cut (but not obscure) the fruit. The resulting blend was added to a large quantity of locally grown chuckleberries to referment for five months. The beer conditioned in bottle for a further three months.
