This complex Brett Beer, aged for five years in a single Scotch Whisky butt, presents a masterclass in wild fermentation. The foundation of pale wheat and pilsner malts provides a delicate, bready backdrop for the profound development of the Mills house culture. Heady aromas of pear-drop esters collide with a deep, soulful earthy funk and subtle undertones of weathered oak. On the palate, it is exceptionally dry and attenuated, showcasing the relentless work of wild Brettanomyces. Bracingly lively carbonation lifts notes of stone fruit and a whisper of peat, culminating in a crisp, lingering finish that balances rustic complexity with refined elegance.
Appearance. Luminous pale gold (3-4 SRM) with a slight, natural haze from extended maturation. Pours with a voluminous, rocky white head that exhibits excellent retention and leaves intricate lacing.
Aroma. High intensity. Pronounced pear-drop and ripe orchard fruit esters are layered over a pungent, earthy barnyard funk. Subtle bready wheat and grainy pilsner malt notes provide a soft base, while a faint hint of smoky peat from the Scotch barrel maturation adds sophistication.
Taste. Initial impression is bone-dry and fruit-forward. Flavors of dried pear and apricot are met by a complex, rustic funk and moderate tannic structure from the five-year barrel sleep. Hop bitterness is very low, allowing the fermentation-derived character and earthy Brett notes to lead. The finish is remarkably clean and dry with a lingering minerality.
Mouthfeel. Medium-light body with a crisp, effervescent mouthfeel driven by high carbonation. A subtle, well-integrated alcohol warmth is present, complemented by a light puckering astringency and a lean, refreshing texture.

"Berlin was made from a single barrel of five year old beer, brewed in April 2018. The wort was made with a nod to traditional Berliner Weissbier brewing, using very pale wheat and pilsner malts, and boiled for a short time with a small amount of old hops. This was then transferred to our open coolship with a good dose of spontaneously collected house culture, to produce a vigorous primary fermentation. The green beer was transfered to a single 500 litre Scotch Whisky butt, for five years maturation, to allow maximum expression of our wild Brettanomyces yeasts. It was bottled unblended, to not dilute the character of this very old beer. A good dose of priming sugar was added to produce lively carbonation. The beer was then conditioned for 6 months in bottle before release. This is undoubtedly one of the most complex beers we have produced, nothing else has been quite like it. The aroma is heady with sharply-fruity pear-drop esters, deep earthy funk and bready-yeast undertones."
