Amber Lees presents a compelling fusion of rich brewing traditions and cider heritage, showcasing a deep amber hue derived from the first runnings of two mashes. Fermented for fourteen months on the lees of Ross on Wye Cider barrels, it exudes a heady aromatic profile of ripe apple and sweet American oak. The palate balances the depth of dark muscavado sugar with the earthy, structured bitterness of aged hops. While the wild fermentation introduces a nuanced funk, the intentional maturation period preserves a medium-full body rarely seen in a Brett Beer, concluding with a dry, fruit-forward complexity and a lingering, woody depth.
Appearance. Deep amber to burnished copper (SRM 14–17) with a slight, natural haze from the lees and bottle conditioning. Pours with a dense, off-white head that shows moderate retention and fine lacing.
Aroma. High intensity with a complex interplay of orchard fruit and wild character. Heady notes of bruised apple and pear from the cider barrels meld with sweet American oak, vanilla, and a hint of dark muscavado sugar. The fermentation character offers moderate funk, characterized by wet hay and earthy leather, layered over a rich, bready malt base.
Taste. The initial impression is one of rich, caramelized malt and dark sugar, quickly giving way to a vibrant cider-like fruitiness. Flavors of dried apricot and red apple are punctuated by a subtle, woody tannin. A firm bitterness from the aged hops balances the initial sweetness without adding modern hop aromatics. The finish is remarkably clean and dry, with a lingering note of earthy funk and toasted oak complexity.
Mouthfeel. Medium-full body with a rounded, slightly creamy texture, deviating from the typical thinness of the style. Carbonation is moderate and fine-beaded. A gentle alcohol warmth is present, reflecting its strength, but it remains smooth without astringency.

"Amber Lees was brewed to have a fairly rich and sweet malty body, balanced by firm bittering and relatively high acidity. This second blend has a touch more poise, along with a little more aromatic interest courtesy of the trans-atlantic dry hopping. This was made from a blend of 2 worts produced in May and August 2021. Half the blend fermented in two freshly emptied, unrinsed cider barrels. The other half in two California white wine barrels. The resulting beer was dry-hopped with whole-leaf Mosaic and Goldings, before priming with dark muscavado sugar for bottle conditioning. After a short 2 months in bottle the aroma is currently one of the most fruit-forward we have produced, with blueberry, strawberry, orange, and ginger in abundance."
