Airy Okay presents a delicate, spontaneous expression of a Bière de Miel, characterized by its remarkably light and fresh profile. Brewed with a foundation of pilsner malt, raw barley, and maize via a traditional turbid mash, it offers a subtle grainy sweetness that carries the floral nuances of honey. Inoculated in a coolship with local wild yeast and bacteria, the beer balances a bright, emerging acidity with a surprisingly structural body. Aged hops contribute a faint, earthy depth without bitterness, allowing the complex interplay of stone fruit esters and mild rustic funk to shine through. It is a graceful, dry, and highly drinkable wild ale.
Appearance. Very pale straw to light gold (2–3 SRM). Topped with a moderate white head with fair retention. Clarity exhibits a slight, soft haze consistent with the use of raw grains and a turbid mash.
Aroma. Moderate intensity featuring a complex blend of floral honey, beeswax, and a rustic Brettanomyces character of wet hay and light barnyard funk. Low grainy-sweet malt notes from the pilsner malt and maize. Fruity esters suggesting apricot and lemon zest are present, with a very low earthy note from the aged hops.
Taste. The initial impression is one of bright, fresh acidity and floral honey. Malt flavors are low and cereal-like, providing a delicate foundation. Hop bitterness is very low, as expected from aged hops, contributing more to the earthy complexity than any sharp bite. The fermentation character is prominent, showcasing stone fruit esters and a mild, leather-like funk. It finishes remarkably dry and crisp with a lingering floral and slightly tart aftertaste.
Mouthfeel. Medium-light body that retains a surprising weight and soft texture due to the raw barley and maize. Carbonation is moderate to high, providing a prickly, refreshing sensation. There is no perceived alcohol warmth and no notable astringency.

It was made from a turbid mash of pilsner malt, raw barley, and maize. The resulting wort was boiled with aged hops before innoculation with local wild yeast and bacteria in our coolship. This produced a very pale wort, with the potential for good acid production, whilst retaining a good weight of body to underpin the honey flavours to come.
