This Wild Specialty Beer is a vibrant, fruit-forward exploration of summer berries. Bursting with the essence of fresh Strawberry and Raspberry sourced from Lesta Market, it offers an immediate sensory hit of jammy sweetness balanced by a sharp, wild acidity. The underlying fermentation character provides a rustic complexity that supports the fruit without overshadowing it. Brisk and refreshing, the palate is dominated by tart red berries leading into a crisp, bone-dry finish. It is a lively, effervescent pour that expertly highlights the interplay between natural fruit sugars and the clean, acidic bite of a modern wild ale.
Appearance. Deep pink to light ruby hue; hazy to opaque from fruit solids. Puffy, light pink head with moderate to poor retention and minimal lacing.
Aroma. High intensity aromatics of freshly crushed raspberries and sun-ripened strawberries. A moderate lactic tartness provides a sharp edge, while low earthy or rustic notes from the wild yeast add depth. Hop aroma is absent; malt character is neutral and masked by fruit.
Taste. Initial impression is a sharp, refreshing acidity followed by intense flavors of tart raspberry and jammy strawberry.
