Mikkeller’s William is an elegant Brett Beer that highlights the delicate bounty of Lilleø pears. Brewed at the technically precise De Proef brewery, this wild ale presents an intricate marriage between rustic fermentation and orchard fruit. The sensory profile is led by perfume-like aromas of ripe pear and white blossoms, layered over a backdrop of classic Brettanomyces traits including wet hay and a subtle earthy funk. On the palate, the Lilleø pears provide a juicy, orchard-fresh character that is quickly swept away by a highly attenuated, bone-dry finish. Effervescent and crisp, it showcases a masterful balance of fruit-forward charm and complex, wild character.
Appearance. Pale straw to light gold (SRM 3-5); features a frothy, white head with moderate retention and light lacing; slight haze is present due to the use of whole fruit and wild yeast.
Aroma. High intensity with a dominant profile of fresh pear, floral esters, and white pepper. Secondary notes of barnyard funk, wet hay, and a faint cracker-like malt sweetness provide a rustic base, while hop character remains very low and herbal.
Taste. Initial impression is of tart, skin-on pear and stone fruit. Malt flavor is minimal, appearing as light cereal grain, allowing the Brettanomyces character—comprising leather and earthy notes—to shine. Bitterness is low, serving only to balance the fruit. The finish is bone-dry and crisp with a lingering, slightly tannic pear skin aftertaste.
Mouthfeel. Medium-light body with high, spritzy carbonation that provides a champagne-like effervescence. Alcohol warmth is very low and well-integrated, while a faint, pleasant astringency from the fruit skins adds structure.
