Mikkeller Stick In The Ear
American IPA 6’5 º
Stick In The Ear is a quintessentially bright and assertive West Coast India Pale Ale. It opens with a vibrant sensory display of resinous pine, grapefruit pith, and floral hop notes, characteristic of classic American varieties. The pour shows brilliant clarity and a resilient white head. On the palate, a high level of bitterness is balanced by a lean, supportive malt profile featuring hints of toasted grain. This leads to a crisp, dry finish where the hop oils linger pleasantly. Mikkeller’s clean fermentation ensures that the complex hop character remains the undisputed star of this moderately strong and refreshing ale.
Appearance. Color is a deep gold to light amber (approx. 7-10 SRM). It possesses brilliant clarity and a medium-sized, white head with excellent persistence and sticky lacing.
Aroma. Intensity is high, featuring a prominent hop-forward bouquet of pine resin, citrus zest, and a touch of floral spice. The malt character is low, presenting as clean, grainy sweetness. Fermentation is very clean with negligible esters.
Taste. Initial impression is sharply hoppy. Medium-high hop flavors of grapefruit and resin dominate, supported by a low, toasted malt background. Bitterness is firm and assertive (aligned with the high IBU range of the style). The finish is dry and crisp with a long-lasting, clean hop bitterness and no harshness.
Mouthfeel. Medium-light to medium body with a smooth, slightly oily texture. Carbonation is medium-high, providing a lively mouthfeel. A very light, well-integrated alcohol warmth is noticeable but smooth.
