Mikkeller Spontanfigs is a deeply complex Fruit Lambic that showcases the marriage of sharp spontaneous fermentation and the rich, jammy depth of added figs. Aged in oak barrels, the sensory profile is defined by a vibrant lactic acidity intertwined with rustic barnyard funk, leather, and earthy notes. The figs contribute a concentrated fermented fruit character, reminiscent of dried plums and honeyed fruit leather, which provides a counterpoint to the beer’s vinous tartness. This expression is underscored by subtle oak tannins and a slightly elevated alcohol presence that adds body, culminating in a bone-dry, lingering, and remarkably sophisticated finish.
Appearance.Deep amber to reddish-copper (12–15 SRM). Hazy with a thin, off-white head that shows moderate retention before fading to a persistent ring; minimal lacing due to high acidity.
Aroma.High intensity. Dominant aromas of fermented figs and dark dried fruit, specifically raisins and plums. Significant wild character with notes of horse blanket, leather, and damp hay. Low wheaty malt and subtle oak woodiness; no hop aroma.
Taste.Intense lactic tartness leads, followed by a complex layer of fermented figs that tastes more like fruit leather than fresh fruit. Low grainy malt sweetness is quickly overtaken by barnyard funk and earthy Brettanomyces character. Bitterness is nearly absent. The finish is bone-dry and acidic, with lingering notes of dark fruit and light oak tannins.
Mouthfeel.Medium-light body with a prickly, moderate carbonation. Features a sharp, puckering acidity without harsh astringency. A light, integrated alcohol warmth is present, adding more structure than a standard lambic.
