Mikkeller Spontan Nelson is a complex Brett Beer that elegantly marries the rustic, barnyard depth of spontaneous fermentation with the sophisticated vinous character of Nelson Sauvin hops. The sensory experience is dominated by a vibrant bouquet of crushed white grapes, gooseberry, and tropical fruit, underpinned by a distinct oaky woodiness derived from barrel aging. On the palate, the wild yeast provides an earthy, leathery funk that balances a crisp, lactic-like tartness. Effervescent and bone-dry, the finish mimics a fine Sauvignon Blanc, leaving a lingering impression of lime zest and toasted wood. It is a masterfully balanced blend that highlights modern hop aromatics within a traditional wild framework.

Appearance. Deep gold to light amber (7–9 SRM); moderate white head with fair retention and fine-beaded lacing; slight haze typical of blended wild ales.

Aroma. High intensity; pronounced Nelson Sauvin character featuring white wine grapes, gooseberry, and passion fruit. Moderate Brettanomyces funk presents as wet hay and earthy spice, complemented by subtle toasted oak and vanilla notes. Low crackery malt presence.

Taste. Initial impression is tart and highly attenuated. Strong hop flavors of white grape and lime peel meld with complex fermentation notes of leather and pepper. Hop bitterness is low, but perceived sharpness is elevated by acidity. Malt is minimal, providing a neutral, bready backdrop. The finish is bone-dry and lingering with a touch of grape-skin tannin.

Mouthfeel. Medium-light body with a lean, crisp texture; high carbonation providing a prickly, champagne-like effervescence. Light, well-integrated alcohol warmth; very low astringency from oak tannins.
