Inspired by the Danish Christmas dessert Ris a la mande, this Ale presents a decadent sensory profile centered on vibrant cherries and marzipan-like almonds. Deep aromas of stone fruit and sweet vanilla rise above a subtle caramel malt backbone. On the palate, the inclusion of lactose and rice creates a luxurious, creamy texture that mirrors rice pudding, while the cherries provide a bright, fruity sweetness. Despite its strength, the beer maintains a deceptive drinkability, balanced by a touch of salt that sharpens the dessert-like flavors of vanilla and nuttiness. It is a harmonious, festive interpretation of a classic Fruit Beer.

Appearance. Deep ruby-amber with reddish hues (15-20 SRM). Moderate light-pink head with fair retention and slight lacing. Notable haze present from the inclusion of rice and lactose.

Aroma. High intensity of sweet and tart cherries and marzipan-like almonds. Rich vanilla and creamy lactose sweetness are prominent, supported by a moderate toasted malt and caramel base. Hop aroma is absent, and fermentation esters are masked by the intense fruit and spice profile.

Taste. Initial impression of succulent cherry sweetness and creamy lactose. The mid-palate features smooth rice character and nutty almond depth, accented by vanilla.
