Mikkeller Monk's Elixir Barrel Aged Brett
This Barrel-Aged Belgian Dark Strong Ale presents a sophisticated collision of monastic tradition and wild experimentation. A base of Pilsner and Pale malts provides a bready, deep mahogany foundation, enriched by the dark caramel and dark fruit notes of cassonade sugar and candy syrup. Northern Brewer, Hallertauer, and Styrian Goldings hops offer a subtle herbal spice, while five months in red wine barrels introduces vinous tannins and dark berry complexity. The Brettanomyces conditioning adds rustic layers of leather and earthy funk, transforming the rich raisin and plum esters into a dry, intricately layered, and warming masterpiece.
Appearance. Deep coppery-brown with garnet highlights; clear with a thick, dense, and persistent light tan head showing excellent lacing.
Aroma. High intensity. Rich toasted bread and dark caramel malt; strong dark fruit esters of raisins, dates, and prunes. Distinctive Brettanomyces funk (leather, horse blanket) and vinous red wine notes. Low herbal hop aroma and soft, spicy alcohol.
Taste. Initial impression of rich, complex maltiness (toffee, crusty bread) followed by dark cherry and plum esters. Northern Brewer and Hallertauer provide a subtle spicy counterpoint to the alcohol. High attenuation from Brettanomyces leads to a moderately dry, vinous finish with red wine tannins and a lingering, smooth peppery spice.
Mouthfeel. Medium-full body with high carbonation that avoids sharpness. Smooth, noticeable alcohol warmth. Lightly tannic and dry on the tongue, lacking any syrupy heaviness.
