This sophisticated Saison masterfully bridges the gap between aged complexity and harvest-fresh vibrancy. A twelve-month maturation in oak barrels provides a foundation of rustic funk and subtle wood tannins, which is then revitalized by a generous dry-hopping of Crosby Idaho 7 wet hops. The Idaho 7 variety imparts pungent layers of citrus oils, tangerine, and a resinous pine depth that cuts through the earthy, farmhouse character. Effervescent and highly attenuated, the palate offers a bright, golden sour interplay of stone fruit esters and peppery phenols, concluding in a bone-dry, refreshing finish that celebrates both time and the peak of the hop season.
Appearance. Pours a brilliant pale gold to light orange with excellent clarity following natural conditioning. It is crowned by a dense, rocky, ivory-colored head that exhibits long-lasting retention and leaves characteristic Belgian lacing.
Aroma. High aromatic intensity featuring a complex bouquet of funky, earthy barnyard notes and well-integrated oak. The Idaho 7 wet hops contribute distinct aromas of fresh pineapple, tangerine, and zesty citrus oils, backed by a peppery phenolic spice and a faint, grainy malt character.
Taste. The initial impression is bright and slightly tart, showcasing a blend of citrus-forward hop flavors and golden sour acidity. Idaho 7 notes of tropical fruit and resinous pine are prominent. The malt profile remains subtle and cracker-like, allowing the spicy yeast esters and oak-derived tannins to drive the complexity. It finishes exceptionally dry with a lingering, pleasant bitterness and a touch of farmhouse funk.
Mouthfeel. Medium-light body with very high, effervescent carbonation. Alcohol warmth is light and well-integrated, while the oak aging lends a very slight, structured astringency that enhances the crisp, dry finish.
