This barrel-aged Belgian Tripel marries classic monastic spiciness with the deep, spirituous influence of eight months in American rum barrels. The base exhibits a soft, grainy-sweet Pilsner malt character that provides a canvas for complex phenols—reminiscent of white pepper and clove—and vibrant citrus esters. The rum wood imparts layers of toasted oak, vanilla, and a hint of dark molasses, enriching the aromatic bouquet. While the finish remains characteristically dry and effervescent, the barrel integration adds a luxurious depth and a gentle, warming spirit character that lingers elegantly on the palate, enhancing the traditional drinkability with unexpected complexity.
Appearance. Deep gold to pale amber (approx. 6–8 SRM). Brilliant clarity with an effervescent rise of fine bubbles. A long-lasting, creamy, rocky white head that leaves significant Belgian lace on the glass.
Aroma. High intensity bouquet featuring a seamless blend of peppery and clove-like phenols with moderate orange-peel esters. The American rum barrels contribute distinctive notes of vanilla, toasted oak, and a subtle molasses sweetness, layered over a light, honey-like malt presence.
Taste. Initial grainy-sweet malt flavor transitions into a spicy yeast character and ripe citrus fruit. The rum barrel aging introduces flavors of caramelized sugar and oak tannins.
