This Belgian Tripel presents a vibrant golden-blonde hue, radiating with the lively effervescence typical of a bottle-conditioned ale. The aroma is a sophisticated weave of spicy phenols and citrusy esters, enhanced by a subtle, integrated addition of coriander that complements the peppery yeast character. On the palate, a soft, honey-like malt sweetness from Pilsner malt provides a delicate foundation for flavors of orange peel and light spice. Despite its potent 8.5% ABV, the beer remains remarkably refreshing and deceptive, finishing bone-dry with a clean, lingering bitterness that invites another sip. It is an unfiltered, elegant expression of the monastic style's complexity.
Appearance. Gold to deep yellow (5–7 SRM). Large, creamy, rocky white head with excellent retention and significant Belgian lacing. Unfiltered and bottle-conditioned, resulting in a slight to moderate haze.
Aroma. High intensity bouquet featuring a seamless blend of peppery phenols, citrusy esters reminiscent of orange zest, and a soft coriander note. Low spicy hop aroma and a light, honey-like graininess from the malt. Alcohol is soft and spicy, not hot.
Taste. Initial soft, grainy-sweet malt flavor quickly gives way to a complex profile of orange esters and peppery yeast phenols. The coriander provides a refreshing, spicy accent. Medium bitterness is amplified by a very high level of attenuation, leading to a bone-dry finish. Aftertaste is clean with lingering spicy yeast and a crisp hop bitterness.
Mouthfeel. Medium-light body with a surprisingly airy and effervescent character. Very high carbonation. Despite the 8.5% ABV, there is only a subtle, well-integrated alcoholic warmth. Smooth and creamy without being heavy.
