This complex Saison offers a sophisticated interplay between rustic grains and refined wine barrel aging. The foundation of authentic Saison yeast provides a peppery spice and orchard fruit backdrop, while a multi-year maturation in wine barrels introduces a bright, lactic tartness from Lactobacillus and Pediococcus. The extended aging imparts a delicate vinous character and subtle oak tannins that elevate the bone-dry finish. Effervescent and elegant, it balances its sharp acidity with a soft grain bill, resulting in a refreshing yet deeply layered farmhouse ale that highlights the artistry of blending and bottle conditioning.
Appearance. Deep gold to light amber in color (7-11 SRM). Topped with a long-lasting, dense, rocky white head that leaves significant Belgian lace. Clarity is hazy due to the grain mixture and being unfiltered.
Aroma. High aromatic intensity featuring a blend of spicy black pepper phenols and fruity esters of lemon and green apple. A notable lactic tartness and vinous wine character are present, supported by a lightly grainy malt backdrop and low earthy hops.
Taste. Initial impression is tart and crisp, leading into a soft, grainy malt palate. Fruity esters of citrus and pome fruit are moderate, complemented by a spicy yeast character. Hop bitterness is low, as the lactic acidity provides the primary balance against the malt. The finish is bone-dry and effervescent with a lingering, clean tartness and subtle oak complexity.
Mouthfeel. Medium-light body with very high, effervescent carbonation. Features a prickly acidic sensation on the tongue. Alcohol warmth is light and well-integrated. No harsh astringency, though a very slight tannic structure from the wine barrels is present.
