This Saison presents a refreshing interplay between traditional farmhouse character and modern New Zealand hops. A vibrant, herbaceous aroma leads the way, mingling with moderate fruity esters and a subtle, peppery spice typical of the style. The malt profile is lean and grainy, allowing the distinct New Zealand hops to provide a crisp, garden-fresh complexity. Effervescent and highly attenuated, it finishes exceptionally dry with a lingering, clean bitterness. The marriage of rustic Belgian fermentation and the bright, zesty character of southern hemisphere hops creates a layered, thirst-quenching profile that remains light on the palate while offering significant sensory depth.

Appearance. Pale gold to light amber (5–7 SRM) with a dense, rocky, long-lasting white head. Displays variable clarity ranging from clear to a slight haze, accompanied by active effervescence and fine Belgian lace.

Aroma. Moderate to high intensity. A complex blend of fruity esters—citrus and pome fruit—complemented by a spicy, black pepper phenolic character. Distinctive New Zealand hops contribute a moderate herbaceous and floral quality. Low grainy-sweet malt provides a subtle backbone.

Taste. Initial impression is bright and crisp, leading into a balance of fruity and peppery yeast flavors. Low grainy malt sweetness is quickly overtaken by a moderate hop bitterness and herbaceous hop flavor. Highly attenuated with a very dry, clean finish. The aftertaste is bitter and spicy.

Mouthfeel. Light to medium-light body with very high carbonation, creating a prickly, effervescent sensation. No significant alcohol warmth. Crisp and refreshing with no astringency.
