Le Castor Pilsner is an elegant and crisp German Pils that showcases a refined interplay between traditional ingredients and a clean fermentation profile. Built upon a base of high-quality pilsner malt, the beer offers a delicate, grainy-sweet foundation reminiscent of fresh dough and crackers. The character is defined by a prominent noble hop presence, utilizing Saaz and Premiant to impart a sophisticated bouquet of spicy, herbal, and floral notes. This lager is exceptionally well-attenuated, leading to a firm bitterness and a snappy, dry finish that emphasizes its thirst-quenching intent. It represents a masterfully balanced everyday beer with high drinkability.
Appearance. Straw to pale yellow (2-4 SRM); brilliant clarity with a tall, creamy, long-lasting white head that leaves fine lacing.
Aroma. Moderate to moderately-high intensity of spicy and herbal hop character from the Saaz and Premiant varieties. Supported by a low to medium grainy-sweet and doughy pilsner malt aroma. Clean lager fermentation with no esters or diacetyl.
Taste. Initial grainy malt sweetness is quickly superseded by a firm hop bitterness. Flavors of spicy Saaz and herbal Premiant hops are prominent. The finish is crisp and very dry with a lingering, clean hop bitterness and a subtle touch of cracker-like malt in the aftertaste.
Mouthfeel. Medium-light body with a crisp, snappy character. Medium-high carbonation provides a refreshing prickle on the tongue. Smooth delivery with no alcohol warmth or harshness.
