Microbrasserie Le Castor

This Black IPA offers a striking sensory collision of dark, autumnal depth and vibrant, juicy hop character. A generous dry-hopping regimen unleashes an intense wave of tropical fruit, citrus zest, and resinous pine that dominates the aroma. Beneath this bright canopy lies a restrained, smooth roastiness reminiscent of dark chocolate and light toast. It balances the aggressive, clean bitterness of a Double IPA with a supportive, subtle malt sweetness. The finish is remarkably dry and crisp, with a comforting trace of alcohol warmth that signals its autumn appeal while maintaining an incredibly thirst-quenching drinkability.

Appearance. Opaque black to very dark brown (approx. 38 SRM) with a thick, persistent light tan head that leaves sticky, beautiful lacing on the glass.

Aroma. High intensity hop aroma bursting with pink grapefruit, mango, and fresh pine resin. A very subtle, clean malt character resides in the background, offering hints of dark cocoa and toasted bread with no harsh burnt or ashy notes.

Taste. Bold, hop-forward flavors of citrus rind, passion fruit, and pine dominate the initial impression. A restrained malt profile follows, providing smooth flavors of dark chocolate and cold-brew coffee without clashing with the hops. The balance is heavily bitter, supported by a medium-high, clean bitterness. Finishes dry with a lingering clean hop bite and a whisper of roasted malt.
