The maceration on garden beets imparts a unique botanical depth and a striking vibrant hue to the visual profile. Six months of aging in oak foudres softens the 8% alcohol presence while introducing subtle woody tannins and a delicate mixed-fermentation tartness. The cereal-forward grain bill, featuring Spelt and Rye, provides a peppery, nutty foundation that complements the fruity esters of the Belgian yeast. This is a sophisticated, highly attenuated ale where the interplay of earthy root vegetables and spicy grains creates a lingering, bone-dry, and multidimensional finish.
Appearance. A vibrant deep ruby to magenta hue (15-20 SRM) with a dense, long-lasting, pink-tinted off-white head. Variable clarity ranging from slight haze to hazy due to the protein-rich cereal grains and unfiltered nature.
Aroma. High aromatic intensity. Distinctive earthy, soil-like notes from the beets are layered over a spicy, peppery grain profile from the Rye and nutty Spelt. Fruity esters of lemon and pome fruit mix with a moderate peppery phenol. Subtle Brettanomyces-driven leather and a faint woody vanilla from the foudre are present.
Taste. Initial impression is earthy and savory, followed by a crisp, tart acidity from the mixed fermentation. Spicy Rye and grainy Spelt flavors provide a rustic center.
