Frimia is a refined Grape Ale defined by its elegant maceration on Sabrevois, Frontenac Noir, and Frontenac Gris pomace. This blend of oak-aged wild beers presents a vibrant, vinous character where the rustic, berry-like notes of the dark grapes meld with a delicate wood-derived structure. Aromas of red fruit and soft tannins lead into a palate of bright acidity and subtle earthiness. At a refreshing 5% ABV, it balances the complexity of a sparkling red wine with the drinkability of a farmhouse-style base, finishing remarkably dry with a lingering echo of dark fruit skins and toasted oak.
Appearance. Deep ruby to soft burgundy with a slight purple tint; topped with a fine, pink-hued head that shows moderate retention. Clarity is good, displaying a brilliant jewel-like quality with some light carbonation visible.
Aroma. Moderate intensity featuring a bouquet of dark berries, cherry, and rustic grape skins from the Sabrevois and Frontenac Noir. Low oak presence provides a hint of vanilla and wood spice, while the wild base contributes a clean, lactic tartness. Malt is a background note of crackers or light dough.
Taste. Initial impression is dry and vinous. Prominent grape flavors of blackcurrant and red berry are complemented by the subtle stone fruit notes of Frontenac Gris. The oak aging adds a gentle tannic grip and structural depth. Bitterness is very low, allowing a mild tartness to provide balance. The finish is exceptionally dry and crisp with a clean, fruit-skin aftertaste.
Mouthfeel. Medium-light body with high carbonation that creates a spritzy, champagne-like effervescence. A light acidity and subtle tannins enhance the perception of dryness. Alcohol warmth is negligible, contributing to a refreshing and highly digestible profile.
