MicroBrasserie Charlevoix COLD IPA
This American IPA presents a modern, lean interpretation of the style, utilizing a neutral Kölsch yeast and local Charlevoix white corn to create an exceptionally crisp and refreshing foundation. The sensory experience is dominated by the experimental HBC 630 hops, which impart distinct layers of raspberry, sweet cherry, and stone fruit over a clean, grainy malt backdrop. Brilliantly clear and highly carbonated, the beer emphasizes hop-derived fruitiness while maintaining a sharp, West Coast-inspired bitterness. The cold fermentation ensures a lager-like purity, allowing the complex berry notes of the hops to shine through to a bone-dry and snappy finish.
Appearance. Pale straw to light gold (4–6 SRM). Brilliantly clear with a dense, long-lasting white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent red berry, cherry, and peach notes from the HBC 630 hops. Very low, clean, grainy maltiness with a hint of corn sweetness. Fermentation profile is extremely clean, with only a faint, crisp pear ester characteristic of a cold-fermented Kölsch yeast.
Taste. Firm bitterness leads into vibrant hop flavors of raspberry, tropical fruit, and stone fruit. The malt presence is low and neutral, providing a lean, cracker-like structure from the white corn. Very low esters. The balance is heavily hop-forward, finishing very dry and crisp with a lingering, clean bitterness and a touch of berry skin in the aftertaste.
Mouthfeel. Medium-light body with a crisp, smooth texture. High carbonation levels provide a prickly, refreshing sensation. Very light, well-integrated alcohol warmth with no perceived astringency.
