This robust American IPA presents a striking amber hue and a profile dominated by the versatile Simcoe hop. The aroma is intensely fruity, uniquely characterized by notes of strawberry grape and resinous pine. On the palate, a sturdy, caramelized malt backbone provides balance to a firm, robust bitterness. The Simcoe hop continues to shine through the mid-palate, offering layers of passion fruit and earthy spice. Appearance. Reddish-amber (12-14 SRM); compact, off-white foam with excellent persistence and lacing; brilliant clarity.
Aroma. High intensity hop aroma featuring prominent resinous pine and tropical fruit, with a distinct berry-like note resembling strawberry grape. Low to moderate caramel and toasted malt sweetness supports the hops. Clean fermentation profile.
Taste. Initial impression is hop-forward with intense flavors of pine, passion fruit, and dark berries. A medium-low toasted malt and caramel flavor provides a supportive base. Bitterness is firm and robust (approx. 60-70 IBU). Finish is dry to medium-dry with a lingering, bitter, and hoppy aftertaste.
Mouthfeel. Medium body with a smooth texture; medium-high carbonation. Light, smooth alcohol warmth is present but well-integrated. No astringency.
