This Australian Sparkling Ale offers a refreshing harmony between classic structure and modern hopping. A foundational malt backbone of UK Maris Otter and Australian ale malt provides a lightly bready, grainy depth that remains crisp and highly attenuated. Restrained additions of US Citra and US Simcoe introduce subtle layers of citrus and pine that intermingle with the style’s characteristic pear and apple esters. Effervescent and lively, the beer balances a firm, lingering bitterness against its medium body, resulting in a clean, dry finish that emphasizes drinkability without sacrificing character.
Appearance.Medium gold (approx. 5 SRM). Features a tall, frothy, persistent white head with fine bubbles. Displays brilliant clarity if decanted, though it is traditionally served with a slight yeast haze and noticeable effervescence.
Aroma.Moderate intensity with a clean, bready malt character from the Maris Otter. Hop aroma is restrained, showcasing light citrus and resinous notes from the Citra and Simcoe, complemented by moderate esters of pear and apple and a very low, clean yeast note.
Taste.Initial bready, grainy malt flavor followed by a medium-high bitterness that rises mid-palate. Hop flavors of grapefruit and light pine are evident but not dominant. Features moderate pome fruit esters and a highly attenuated, bone-dry finish with a lingering, crisp bitterness.
Mouthfeel.Medium body with a smooth but highly carbonated, spritzy mouthfeel. The high carbonation provides a prickly carbonic bite. Very well-attenuated with no residual sweetness and no perceived alcohol warmth.
