This session-strength Saison presents a complex, mixed-fermentation profile that elevates the traditional Grisette framework. Bright citrus notes from Mandarina hops meld seamlessly with the delicate stone fruit and mineral acidity of Riesling grapes. A rustic, spicy foundation is established by Saaz hops, while the addition of Honey provides a subtle floral lift without lingering sweetness. The mixed culture introduces a refreshing, prickly tartness that complements the high attenuation. Effervescent and bone-dry, the palate balances grainy textures against a vibrant, lemony finish, capturing a sophisticated farmhouse character that remains effortlessly drinkable and intellectually engaging.

Appearance. Pale straw to light gold (3-5 SRM). Effervescent with a dense, rocky, long-lasting white head and fine lacing. Slight to moderate haze typical of an unfiltered mixed-fermentation farmhouse ale.

Aroma. Moderate to high intensity. A complex bouquet of tangerine and orange peel from Mandarina hops, layered with the herbal, spicy snap of Saaz. Floral honey notes and Riesling-derived pome fruit such as green apple and white peach are prominent. A mild funk and lemony tartness from the mixed culture provide a rustic depth over a light, grainy malt base.

Taste. Initial tartness from the mixed fermentation leads into a bone-dry, highly attenuated finish. Hop flavors reflect the aroma with spicy Saaz notes and citrusy Mandarina. The Riesling grapes contribute a subtle vinous character and bright acidity. Malt is low and grainy, suggesting wheat or rustic cereals. Bitterness is moderate but crisp, transitioning into a dry, lingering, slightly mineral aftertaste.

Mouthfeel. Light body with very high, effervescent carbonation. No alcohol warmth. Crisp and refreshing with a light, palate-cleansing acidity and no astringency.
