This light ale presents a vibrant, floral nose dominated by emblematic Saaz hops and the delicate, nectar-like nuances of linden tree honey used for conditioning. The palate is defined by extreme dryness and high attenuation, revealing layers of spicy phenolics and soft, grainy malt derived from local organic ingredients. Despite its low alcohol content, it offers sophisticated complexity with a refreshing, light acidity and a crisp, herbal finish. Appearance. Very pale straw to light gold. Hazy and unfiltered with a dense, long-lasting white rocky head that leaves intricate Belgian lace. Highly effervescent with fine, rising bubbles.
Aroma. Moderate to high intensity with a complex blend of spicy Saaz hops, featuring herbal and earthy notes, alongside floral linden honey. The mixed fermentation contributes subtle fruity esters of green apple and pear with peppery yeast-derived phenolics. A background of rustic, grainy malt provides a soft, bready foundation.
Taste. Initial impression is bone-dry and refreshingly crisp. Flavors of spicy black pepper and herbal Saaz hops lead, supported by a delicate floral honey character that persists without residual sweetness. The malt is light and crackery, reflecting the organic local grain. Moderate bitterness is balanced by a faint, clean tartness from the mixed fermentation, finishing very dry and clean with a lingering herbal aftertaste.
Mouthfeel. Light body with a prickly, very high carbonation level that enhances the refreshing character. No alcohol warmth is present. Smooth yet crisp, with a subtle, pleasant astringency from the hops and high carbonation.
