This sophisticated Brett Beer presents a masterclass in patient wood-aging, blending spontaneous fermentation with the aromatic complexity of organic Pálava grapes. Three years in oak barrels have refined the sensory profile, yielding an elegant bouquet of rose petals, lychee, and white spice—hallmarks of the Gewürztraminer-related Pálava varietal—woven into a tapestry of aged funk. Notes of sun-dried hay and subtle leather complement the vibrant fruit. The palate is bone-dry and effervescent, showcasing a harmonious marriage of vinous structure and wild fermentation character that culminates in a crisp, lingering finish of floral earthiness and refined mineral depth.

Appearance. Deep amber to burnished orange (10–14 SRM); slightly hazy with a fine-bubbled, off-white head that shows moderate retention and delicate lacing.

Aroma. High intensity; prominent floral esters of rose and honeysuckle transition into tropical lychee and stone fruit. Deep Brett-driven funk provides complexity with layers of wet hay, earthy cellar, and old leather, backed by a subtle, woody oak presence.

Taste. Initial floral and spice-forward grape flavors lead to a very dry, highly attenuated profile. Minimal hop bitterness is replaced by a gentle grape skin tannin.
