This spontaneous Brett Beer presents a complex, rustic profile shaped by fifteen months of barrel maturation and a traditional coolship process. The sensory experience is led by a nuanced interplay of funky, barnyard aromatics and earthy wet hay, typical of mature wild fermentations. Bright notes of apricot and dried citrus peel emerge from the glass, balanced by a subtle, woody tannin from the oak. On the palate, it is exceptionally dry and crisp, showcasing a delicate fruitiness and a faint, non-lactic tang. It captures a pastoral essence, delivering a sophisticated, forest-floor character with a remarkably clean, lingering finish.

Appearance. Pale gold with a slight, natural haze. Pours with a delicate, white mousse-like head that fades to a persistent ring; minimal lacing due to extended aging.

Aroma. High intensity aromatics of aged Brettanomyces, featuring barnyard, damp earth, and leather. Secondary layers of stone fruit like dried apricot and lemon zest, with a distinct oak-derived woody note.

Taste. Bone-dry initial impression with highly attenuated malt. Flavors of tart peach and citrus are complemented by a rustic, peppery funk and a light, flinty minerality. Bitterness is low, allowing the barrel tannins to provide structural balance.
