The addition of multiple varieties of hand-picked organic sour cherries for another year imparts a deep, vibrant fruit expression. On the palate, the rustic, nutty character of raw organic spelt and organic barley malt provides a sturdy backbone to the assertive stone fruit and elegant tannic structure. It is a rich, layered experience where funky barnyard notes meet the bright, acidic snap of heritage cherries.

Appearance. Deep ruby-red to mahogany with a slight haze from the raw organic spelt; pours with a thin, pinkish-white head that fades into a persistent collar.

Aroma. High intensity; dominant notes of ripe sour cherries and cherry pits. Underneath, a complex funk of wet hay, leather, and earthy cellar notes is supported by a subtle vanilla and toasted oak presence.
