This Brett Beer showcases a rustic foundation of raw organic spelt and barley, providing an earthy, textured counterpoint to the intense stone fruit. The aroma is a complex tapestry of barnyard funk, wet hay, and lush floral notes. On the palate, multiple old varieties of apricots offer a deep, evolving flavor profile that transitions from ripe fruit to a dry, leathery finish. Effervescent and elegant, it captures a distinct terroir with refined wood-derived tannins and crisp acidity.
Appearance. SRM 6-9; deep gold to sunset orange with a persistent, fine-beaded white head. Moderate haze from the raw spelt and long fruit contact, resulting in a luminous, glowing clarity.
