This refined American Lager presents a poetic, old-world approach to a classic style, utilizing local organic heirloom barley malt and a significant addition of emmer. The result is a brilliant, straw-hued pour with a delicate, grainy-sweet aroma complemented by faint floral hop notes. On the palate, the heirloom barley provides a clean, elegant base, while the emmer adds a subtle, rustic grain complexity. Highly carbonated and impeccably clean, it finishes crisp and dry with a gentle, balanced bitterness. It is a sophisticated expression of place, balancing traditional lager drinkability with the unique, nutty character of ancestral grains.
Appearance. Brilliant clarity with a pale straw-gold color (3 SRM). It supports a frothy white head with moderate retention and light lacing.
