Métaphore Defiance presents a sophisticated intersection of rustic wild fermentation and the intense structure of Nitra grapes. This Cabernet-type varietal, harvested late and exceptionally ripe, imparts a deep, wine-like character defined by significant tannic grip and a dark fruit profile. The eighteen months spent in oak barrels have integrated subtle woody notes with a pronounced Brettanomyces presence, leaning into earthy funk, aged leather, and wet hay. On the palate, the vinous depth of the Nitra grapes balances the high attenuation of the mixed fermentation, resulting in a dry, complex profile where thick berry skins and rustic yeast character converge harmoniously.
Appearance. Deep, opaque ruby-purple with garnet highlights (SRM 28-35). Dense, mauve-tinted foam with moderate retention and light lacing; slightly hazy due to mixed fermentation and lack of filtration.
Aroma. High intensity with a complex layering of ripe blackcurrant, blackberry, and dark cherry from the Nitra grapes. Pronounced funkier notes of leather, barnyard, and earthy soil are supported by a subtle oaky vanillin and a hint of acetic sharpness.
Taste. Initial impression of concentrated dark fruit and vinous acidity. Malt flavor is low, providing a neutral backdrop for the intense grape character. High attenuation leads to a bone-dry finish. Moderate funk of wet hay and spice complements a firm, lingering tannic astringency from the grape skins and oak. Bitterness is low from hops but perceived as moderate through tannins.
Mouthfeel. Medium body with a lean, highly attenuated structure. Moderate carbonation provides a crisp lift, while the high tannin content provides a significant, puckering astringency. Noticeable alcohol warmth is well-integrated with the barrel character.

Een bier van gemengde gisting met Nitra-druiven, 18 maanden gerijpt in eikenhouten vaten. Nitra is een lokale druivensoort van het cabernettype, oorspronkelijk gekweekt in Slowakije. Het wordt tegenwoordig zeer schaars verbouwd. Het jaar 2020 was voor velen ongetwijfeld een zwaar jaar en vol onverwachte gebeurtenissen. Net toen een oude teler voor de uitdaging stond zijn oogst te verkopen, omdat de vraag dat jaar vrijwel nihil was, werd mij aangeboden er gebruik van te maken. Bij deze late oogst, begin november!, werden de zeer rijpe bessen vervolgens laten macereren in een op vat gerijpt bier. Deze kan niet méér verschillen van bijvoorbeeld “Pinots”. Nitra-druiven hebben een behoorlijk dikke schil en zorgen voor veel kleur en tannines! Het werd vervolgens zorgvuldig gemengd en is funkier en trouw aan deze unieke variëteit.
