Appearance. Pale gold to light straw (3–5 SRM). Displays a slight haze from the fruit and yeast. Pours with a fine-textured, white head that has moderate retention and leaves light lacing.
Aroma. Moderate intensity with a clear focus on fresh peach skin and floral esters. A gentle Brett character provides notes of dried hay and a subtle, dusty earthiness. Malt is low, appearing as soft cracker or wheat, with virtually no hop aroma.
Taste. Initial impression is crisp and highly attenuated. The peach flavor is natural and vibrant, evolving into a specific candied peach note in the finish. Fermentation character is complex, offering a light, earthy funk and a hint of fruit-skin tartness. Bitterness is very low (approx. 10-15 IBU), allowing the dry, fruit-forward finish to dominate without being sweet. Clean and refreshing aftertaste.
Mouthfeel. Light-bodied with a crisp, lean texture. High carbonation provides a prickly and lively mouthfeel. No alcohol warmth is present, and there is zero astringency despite the inclusion of whole fruit.
