This complex American IPA showcases a vibrant fusion of modern hops and wild fermentation. The profile is headlined by El Dorado hops, imparting intense notes of tropical pineapple, ripe watermelon, and stone fruit. Aging in white wine barrels introduces a sophisticated vinous depth, characterized by subtle oak tannins and green grape nuances. The presence of Brettanomyces claussenii enhances the aromatic complexity with a hint of earthy funk and bright orchard fruit esters, while driving the beer to a crisp, dry finish. It presents a masterful balance where the aggressive bitterness typical of the style is softened by nuanced barrel character and fruity yeast layers.

Appearance. Medium gold with a slight haze; features a medium-sized, white head with good persistence and delicate lacing.

Aroma. High intensity hop aroma with dominant notes of pineapple, pear, and watermelon from El Dorado hops. Complemented by vinous white grape, light oak, and a subtle earthy, fruity funk derived from Brettanomyces. Low grainy malt sweetness provides a clean background.

Taste. Initial impression of tropical fruit and citrus followed by a firm hop bitterness. Medium-low grainy malt flavors support complex layers of white wine, stone fruit, and a mild Brett-driven tartness. The finish is very dry and crisp with a lingering hoppy and vinous aftertaste.

Mouthfeel. Medium body with a smooth, drying texture. Medium-high carbonation provides a lively mouthfeel. A very light, well-integrated alcohol warmth is present without any harshness.
