The addition of biscuits provides a distinct toasted, doughy middle that softens the classic citrus and resin hop bite. At 6.5% ABV, it carries a smooth, integrated warmth. Appearance. Opaque, jet black (40 SRM) with a thick, persistent, light-brown creamy head that leaves dense lacing.
Aroma. High intensity; dominant notes of dark chocolate fudge and roasted coffee beans. Secondary scents of toasted biscuits and a moderate citrusy, resinous hop character. Low fermentation esters.
Taste. Initial palate of bittersweet chocolate and heavy roast. Mid-palate reveals sweet fudge and a bready, doughy biscuit quality. High bitterness is present but tempered by the adjunct sweetness. Finish is medium-dry with lingering cocoa and a hint of charcoal.
