This Saison presents a sophisticated interplay between rustic farmhouse character and the unique botanical depth of Ratafia barrel aging. Pouring a hazy deep gold with an effervescent ivory head, it greets the nose with a complex bouquet of black pepper, pome fruit, and a distinct herbal nuttiness characteristic of walnut-based Ratafia. On the palate, the high attenuation ensures a bone-dry finish, allowing nuances of green herbs and medicinal spice to weave through a foundation of grainy malt and firm bitterness. The 6.2% ABV provides a gentle, well-integrated warmth, while the prickly carbonation lifts the nuanced barrel-derived accents of anise and mountain botanicals for a refreshing, complex finish.
Appearance. Pale gold to deep amber in color with a slight haze. Features a long-lasting, dense, and rocky ivory head that leaves significant Belgian lace. Highly effervescent.
