This elegant Grape Ale presents a sophisticated fusion of a rustic Grisette base and the vibrant essence of Hondarribi-Zuri grape skins. The sensory profile is defined by five months of oak aging, which imparts a structured, wine-like character. Aromas of green apple, white peach, and citrus from the grapes meld with a faint, spicy house yeast character and subtle woody notes. On the palate, a bright acidity leads into a bone-dry, crisp finish. The wild fermentation lends a soft complexity without being overly funky, maintaining a mineral-driven, sparkling character reminiscent of a refined Txakoli wine.
Appearance. Pale straw to light gold (3–4 SRM). Effervescent with a moderate, bright white head that shows moderate retention and light lacing. Brilliantly clear.
Aroma. Moderate intensity with high grape character featuring green apple, white peach, and lemon zest. Low malt sweetness, showing hints of cracker and wheat. Subtle spicy phenols from the house yeast and a light touch of neutral oak. Hop aroma is absent.
Taste. Initial impression is refreshingly tart with medium-high grape intensity. Flavors of unripe pear and lime dominate, supported by a lean, biscuit-like malt backbone. Bitterness is very low, allowing the sharp acidity to provide balance. The finish is exceedingly dry and crisp with a lingering mineral and light tannic aftertaste.
Mouthfeel. Medium-light body with high carbonation creating a prickly, champagne-like texture. Low alcohol warmth. A subtle tannic astringency from the Hondarribi-Zuri skins and oak provides a structured, wine-like grip.
