This Wild Specialty Beer presents a vibrant interplay between a rustic, grain-forward grisette base and a bright addition of tart cherries. The sensory profile is defined by a lively acidity that accentuates the essence of sun-ripened cherries, stripping away sweetness to leave pure, vinous fruit notes and subtle almond-like pits. A gentle wild fermentation introduces layers of farmhouse funk and earthy Brettanomyces character, which meld seamlessly with the delicate, wheaty malt backbone. Effervescent and bone-dry, it offers a refreshing, complex experience where the natural tannins of the cherries provide a structured, elegant finish that lingers with a crisp, acidic snap.
Appearance. Deep ruby to pinkish-red hue with a light, hazy opacity. The head is a pale pink foam that dissipates quickly with poor retention, consistent with the acidic environment.
Aroma. High intensity with prominent notes of fresh tart cherries and red berries. A distinct lactic tang is present, accompanied by earthy, barnyard funk and a subtle, grainy wheat aroma with moderate stone fruit esters.
Taste. Initial sharp, clean lactic sourness followed by intense, unsweetened cherry flavors. The malt presence is low, offering a cracker-like, rustic grain foundation. Hop bitterness is very low, as the acidity drives the balance. The finish is exceptionally dry and crisp with lingering tart fruit and a hint of funk.
Mouthfeel. Light body with high, prickly carbonation. A very slight tannic astringency from the cherry skins adds structure and enhances the dry perception. No significant alcohol warmth.
