This session-strength Saison presents a vibrant interpretation of the farmhouse tradition, infused with the tart and brambly essence of blackberry and red currant. The rustic grain bill provides a soft, cracker-like foundation that allows the yeast’s signature black pepper phenols and pome fruit esters to shine. The addition of red currant contributes a bright, snapping acidity and a ruby-tinged character, while the blackberry adds a deep, forest-fruit complexity without cloying sweetness. Highly attenuated and effervescent, it balances moderate hop bitterness with a bone-dry finish, resulting in a refreshing, fruit-forward ale that maintains its spicy, rustic integrity.

Appearance. Hazy, pale gold with a distinctive ruby-pink blush from the fruit; features a dense, rocky, off-white to pale pink head with excellent retention and Belgian lacing.

Aroma. Moderate-high intensity featuring a complex blend of spicy black pepper yeast phenols and floral hops. The fruit additions dominate the profile with bright, tart red currant and earthy, jammy blackberry notes. Low grainy malt sweetness provides a clean backdrop for the expressive fermentation character.

Taste. Refreshing and highly attenuated with a bone-dry finish. Initial tartness from red currant transitions into a soft, grainy malt palate. Blackberry adds depth, while the yeast contributes a peppery spice that lingers. Bitterness is moderate and crisp, working with the fruit acidity to provide a snap in the aftertaste. No residual sweetness.

Mouthfeel. Light-bodied and highly effervescent with a prickly, refreshing carbonation. No alcohol warmth is present. Crisp and clean mouthfeel with a slight, pleasant fruit-skin astringency.

"Meta" en euskera se refiere a la acumulación de heno para los animales en invierno. Este sistema de explotación está desapareciendo progresivamente, en forma de cervezas de granja. "Edabeak" en euskera se llama medicina hecha para beber y se refiere a las sidras que elaboraremos, zumos fermentados, mieles, refrescos caseros, etc.
