This Spanish-crafted Doppelbock pours with the depth and intensity promised by its seven-malt bill. A complex sensory profile emerges, blending the rich Maillard depth of a traditional dark lager with the evocative chocolate and toasted undertones of a Porter. The aroma is dominated by toasted crust, dark fruit leather, and a hint of cocoa, while the palate delivers a decadent wave of bready sweetness and subtle caramel. Most striking is the mouthfeel; it is remarkably robust and silky, mimicking the creamy texture of a cappuccino. Despite its 8% strength, the alcohol provides only a gentle, well-integrated warmth, finishing clean with a lingering malt richness.
Appearance. Deep mahogany to dark brown with brilliant ruby highlights. It supports a thick, persistent, creamy tan head that leaves significant lacing on the glass.
Aroma. High intensity of rich, toasted malt and deeply developed Maillard products. Notes of toasted bread crust and dark fruit—specifically plum and raisin—are complemented by a subtle, chocolate-like sweetness. No hop aroma is present; the fermentation profile is clean and yeast-neutral.
Taste. Initially very rich and malty-sweet, showcasing layers of dark bread, caramel, and a hint of cocoa reminiscent of a porter. The mid-palate reveals dark fruit complexity without being cloying. Bitterness is moderately low, serving only to support the malt dominance. The finish is smooth and moderately dry, with a clean lager character and a lingering toasty aftertaste.
Mouthfeel. Full-bodied and exceptionally creamy with a silky, luxurious texture. Carbonation is moderate to moderately low. A smooth, gentle alcohol warmth is present but remains well-integrated without any harshness.
