This sophisticated Belgian Tripel bridges the gap between monastic tradition and oenological elegance. Aged for eighteen months in Sauvignon Blanc barrels, it pours a deep amber-gold, presenting a complex bouquet of peppery phenols and citrusy esters layered over distinctive vinous notes of white grape and grass. On the palate, a foundation of Pilsner malt provides soft honey and light caramel notes that support vibrant flavors of green apple and gooseberry. Despite its 8.5% strength, the beer remains highly carbonated and effervescent, finishing remarkably dry with a lingering, wine-like tannin and firm, integrated bitterness.
Appearance. Deep gold to pale amber (7–10 SRM); brilliant clarity with an effervescent rise; thick, creamy, long-lasting off-white head with dense Belgian lacing.
Aroma. High intensity; spicy pepper and light clove phenols; fruity esters of orange peel and pear; significant vinous character from Sauvignon Blanc barrels, including hints of grass and white currant; supportive honey-like and light caramel malt.
Taste. Complex initial impression of spicy yeast and tart white wine; bready and lightly caramelized malt flavors; hop bitterness is firm but balanced by oak-derived tannins; dry, vinous finish with a lingering peppery aftertaste and no cloying sweetness.
Mouthfeel. Medium body with a light, effervescent texture; high carbonation; deceptive alcohol presence with a soft, well-integrated warmth; smooth and highly attenuated.
