This elegant Witbier offers a uniquely Québécois interpretation of the classic Belgian style, channeling the freshness of a boreal herbal tea. The presence of unmalted wheat provides a soft, bready foundation that allows the aromatic profile to shine. Distinctive notes of Myrique Baumier release resinous, forest-like oils, while Chamomile adds a delicate floral softness. The addition of Charlevoix Caraway introduces a subtle, earthy spice that complements the zesty citrus esters typical of the style. Refreshing and vivacious, it captures a crisp spring morning with its dry finish and light, airy texture, perfectly balanced to evoke the season’s first buds.

Appearance. Pale straw to light yellow (2-4 SRM). Opaque and very cloudy with a milky, whitish-yellow luminescence from the wheat starch. Features a dense, white, moussy head with excellent retention and delicate lacing.

Aroma. Moderate intensity with a refreshing bready and grainy wheat base. The traditional citrus is replaced by a complex boreal perfume; the Myrique Baumier provides a piney, resinous spice, while Chamomile lends a sweet, floral, and slightly apple-like honeyed note. A faint peppery, herbal hint from Caraway blends with light yeast esters.

Taste. Initial impression is refreshingly crisp and herbal. Soft, grainy malt and bready wheat flavors form the core, supporting layers of resinous Myrique and calming floral Chamomile. The Caraway provides a mild, savory-spice counterpoint. Hop bitterness is low, serving only to balance the subtle wheat sweetness. Finishes very dry and clean with a lingering herbal-citrus aftertaste.

Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the wheat. High carbonation creates a lively, effervescent, and prickly sensation on the tongue. No alcohol warmth. Exceptionally refreshing without any astringency or heaviness.
