This session-strength Saison showcases a rustic, botanical complexity characteristic of Menaud's terroir-driven approach. Built on a foundation of wheat and rye, the beer presents a grainy, slightly spicy cereal character that perfectly supports the infusion of common tansy, anise hyssop, and raspberry leaves. The aroma is a vibrant blend of peppery yeast phenols and herbal licorice, while the palate delivers an assertive hop bitterness that merges seamlessly with the earthy, tea-like notes of the botanicals. Effervescent and bone-dry, this table-strength ale remains exceptionally refreshing, highlighting a sophisticated balance between traditional fermentation esters and wild, leafy elements.
Appearance. Pale straw to light gold (4–5 SRM). Pours with a dense, rocky, snow-white head that exhibits excellent retention and fine Belgian lacing. Significant haze is present due to the high proportions of unmalted wheat and rye.
Aroma. Moderate-high intensity featuring a complex mix of peppery phenols and citrusy esters. Anise hyssop provides a distinct but integrated licorice lift, complemented by the earthy, leafy scent of raspberry leaves. Low grainy sweetness from the wheat and rye is present, alongside a spicy, floral hop character.
Taste. Initial impression is bright and botanical. Moderate hop bitterness is heightened by the spicy yeast profile and the subtle tannins of the tansy and raspberry leaves. Malt flavors are light and rustic, emphasizing cracked grain and rye spice. Flavors of green tea and mild mint emerge mid-palate, leading to a very dry, crisp finish with a lingering peppery aftertaste.
Mouthfeel. Light-bodied and highly attenuated. High carbonation creates an effervescent, prickly sensation on the palate. No alcohol warmth is perceived. A very faint herbal astringency from the raspberry leaves adds to the overall refreshing, clean quality.
