Menaud Bruyère is a refined Brett Beer that elegantly balances rustic grains with wild fermentation. Brewed with local Isle-aux-Coudres barley and spicy rye, the base provides a sturdy, earthy foundation for the floral and herbal notes of heather. A brief maturation in red wine barrels tempers the heather’s natural tannins while infusing subtle red fruit and oak nuances. The Brettanomyces yeast imparts a characteristic farmhouse profile, ranging from stone fruit esters to a light, earthy funk. This wild ale finishes exceptionally dry and crisp, showcasing a sophisticated harmony between botanical bitterness, vinous depth, and complex yeast character.
Appearance. Deep gold to amber with a soft pinkish-ruby tint from the red wine barrels. Displays a slight haze and a persistent, creamy off-white head with fine lacing.
Aroma. High intensity with a complex layering of fruity esters like apricot and red berries, followed by a rustic farmhouse funk of wet hay and leather. Distinctive floral heather and spicy rye notes are supported by a subtle vinous oak character.
Taste. Initial impression is bone dry and crisp. The grainy Isle-aux-Coudres barley and spicy rye provide a textured malt base for earthy Brettanomyces flavors. The heather contributes a herbal, botanical bitterness that is softened by red wine tannins and a hint of dark grape. The finish is long and dry with a lingering earthy-spicy aftertaste.
Mouthfeel. Medium-light body with a high carbonation level that provides a prickly, refreshing effervescence. A very light tannic astringency from the wood and heather adds structure without harshness. Low alcohol warmth.
