Menaud Baies presents a refined evolution of the classic Saison, marrying the rustic character of farmhouse yeast with the deep, vinous intensity of forest fruits. Aged in oak barrels and refermented on blackberries and Lupin Fruit blackcurrants, the profile is defined by a vibrant interplay of tart dark fruit and peppery spice. The blackcurrants contribute a distinct musk and sharpness, while the blackberries offer a rounder, jammy depth. This complexity is underscored by a delicate wood-derived tannin and a refreshing acidity that heightens the attenuation, culminating in an exceptionally dry, elegant, and effervescent finish.
Appearance. Deep garnet to ruby-purple (approx. 14-22 SRM) with a hazy, unfiltered quality. Pours with a dense, persistent light pink to mauve head that leaves fine Belgian lacing.
Aroma. High intensity aromatics of musky blackcurrant and ripe blackberry layered over a spicy fermentation profile reminiscent of cracked black pepper. Subtle notes of toasted oak and a faint lactic tang are balanced by a light, grainy malt backbone.
Taste. Initial tartness from the blackcurrant and blackberry leads into a mid-palate of spicy phenols and earthy, rustic grains. The barrel aging adds a sophisticated layer of dry wood and tannin. Bitterness is low, as the refreshing acidity provides the primary balance. The finish is remarkably dry and crisp with a lingering berry skin aftertaste.
Mouthfeel. Medium-light body with very high carbonation providing a lively, effervescent prickle. A light alcoholic warmth is present, complemented by a mild puckering astringency from the fruit skins and oak tannins.
